Kim’s Cheeseburger Pie – a deconstructed cheeseburger with a Thai kick!


Our favourite Canadian living in London, Kim, visited Edinburgh last week. We were reminded of her much-loved Cheeseburger Pie recipe that she once gave to us and thought it's so good that we should share it with you too!

This mouth-watering meal is both easy to make and tastes super. It’s cheesy, meaty and garlicky with a distinct Thai flavour.



Ingredients:


  • 240g dry basmati rice
  • Splash of olive oil
  • 1 diced onion
  • 2 tsp Schwartz Thai 7 spice seasoning
  • 500g extra lean minced beef
  • 1.5 x 750g jars of Dolmio Bolognaise Intense Onion and Garlic Pasta Sauce
  • 3 medium diced peppers
  • 240g grated cheese
  • Optional: Old El Paso Stand 'N' Stuff Soft Tortillas x8




Instructions:


  1. Preheat the oven to 200°C or Gas 6.
  2. Prepare the rice.
  3. Heat oil in ban, brown the onion and add the Thai seasoning.
  4. Stir in the minced beef and brown.
  5. Add the sauce and peppers.
  6. Stir in the rice and simmer for 15 minutes.
  7. Add ¾ cheddar and stir.
  8. Add the rest and oven cook for 15 minutes.
  9. Optional: Serve in Old El Paso Tortillas – a handy way to hold the mixture.


This recipe serves four, so you might want to freeze some if there is less of you. Or the Canadian way might be to wash it down with some pop or a two-four!
