Edinburghers, salads are not just for summer

Be a hero: try our healthy Nutty Grape and Beetroot Side Salad

This simple and seductive side salad is full of sweet and juicy flavours which offers a fresh boost of vitality to any main course. The beetroot adds a Marvel-ous tanginess to the other ingredients and coats them in a foxy red tinge. 



Ingredients
  • 1 bag of Tesco’s Peppery Salad (includes wild rocket, dark red baby leaf, mizuna and spinach)
  • Extra Rocket (optional)
  • 300g (10oz) chopped Steamed Beetroot (pickled with malt vinegar)
  • 2 handfuls of halved red grapes
  • 1 or 2 handfuls of cashew nuts


1) Kick off by placing the salad in the bowl and tear leaves into bite-size chunks. Do this gently - the strength of Drax The Destroyer is not required for this task.


2) Optionally add in extra rocket (Also known as arugula). Feeling reluctant? It is worth noting that this leafy green is loaded with nutritional benefits for nearly every area of the body, from the brain to the liver, as well as the skin and blood vessels.


3) After chopping into cubes, add in the naturally sweet Steamed Beetroot. It’s just as well that this distinct ingredient is on the radar as it advances as the Daredevil of the dish. 


4) Everyone needs an ally so half each one of our army of red grapes and punch them into the mix.


5) Finish it with the cashews designed to add crunch and mix everything together with a spoon. The cashews will redden and soften the longer they are left.


6) Season or garnish however you please.
